The name Gillaroo comes from a trout that is unique to the west of Ireland. The name comes from the Gaelic “Gil” and “roo” or in English “The Red One (or Lad)” from the unusual red flecking on the fish. Lough Melvin, home of the Gilaroo, is one of the places where I grew up.
